  • 2 1/4 cups cake flour
  • 2 teaspoons baking powder
  • 1 cup butter or margarine softened -- 2 sticks
  • 1 package cream cheese, softened -- 8 ounces
  • 1 1/2 cups sugar
  • 4 large egg
  • 1 teaspoon each, vanilla extract, grated lemon rind
  • 2 tablespoons rum, brandy or cognac
  • confectioner's sugar

Step 1

Heat oven to 325 degrees. Grease 10-inch tube or bundt pan; set aside. Sift together flour and baking powder; set aside
Beat together butter and cream cheese until well blended. Add sugar and beat until light, about 2 minutes. Beat in eggs and flavorings, then carefully blend in flour mixture.
Turn batter into prepared pan; bake 75 to 80 minutes, or until toothpick inserted in center comes out clean. Cool in pan 5 minutes; turn out onto rack to finish cooling. Dust with confectioners sugar while still warm.

2 1/4 cup cake flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1 package (8 ounces) non fat cream cheese, softened
1/2 cup (1 stick) corn oil margarine, softened
1 1/4 cups sugar
2/3 cup liquid egg subsitute
2 large egg whites
1/2 cup buttermilk
1 teaspoon each vanilla extract, grated lemon rind
2 tablespoons rum, brandy or cognac
1 tablespoon confectioners' sugar for sprinkling
Heat oven to 325 degrees. Coat 10-inch tube pan with non stick vegetabel spray; set aside. Sift flour baking powder and baking soda together; set aside.
Beat cream cheese and margarine with an electric mixer in large bowl until well blended. Add sugar and beat until light, 2 minutes. Beat in egg subsitute, egg whites, buttermilk, vanilla, lemon zest and liquor; mix well. Add flour mixture and beat until just blended.
Turn batter into prepared pan. Bake until toothpick inserted in center comes out clean, 75 to 80 minutes. Cool in pan 5 minutes before turning our onto rack to finish cooling. Dust with confectioners' sugar while still warm.
