Ingredients
- CREAM CHEESE FROSTING:
- 2-1/2 cups grated carrots
- 2 cups flour
- 2 cups sugar
- 4 eggs
- 1 cup vegetable oil
- 2 teaspoons baking soda
- 1 teaspoon salt
- 1 teaspoon vanilla
- 2 teaspoons cinnamon
- 1 cup walnuts, chopped
- 1/2 cup butter, softened
- 8 oz. cream cheese, softened
- 2 teaspoons vanilla
- 3 cups powdered sugar
- 1/4 cup walnut, chopped (optional)
Preparation
Step 1
Beat egg and oil for 1 minute. Add sugar until light and fluffy and add vanilla. Fold carrots into egg mixture and fold flour mixture. Beat batter for 1 minute. Grease a bundt pan and pour batter mixture.
Bake at 350F for 25 to 35 minutes.
For the cream cheese frosting:
Mix butter and cream cheese, add vanilla and add the powdered sugar. If using walnut, fold the walnut to the cream cheese mixture. Spread over cake.
