~~Virginia's Pea Salad~~

Great make ahead recipe because it will last in refrigerator for Three Weeks!

Ingredients

  • Boil:
  • 3/4 cup vinigar
  • 1/2 cup oil
  • 1 cup sugar
  • 1 tsp. salt
  • 1 tsp. pepper
  • Let this mixture cool before pouring it over the next ingredients
  • canned vegetables are really good in this:
  • 1 can cut green beans
  • 1 can Leseur shoepeg corn
  • 1 small jar pinento, chopped finely
  • 1 pkg frozen green peas
  • 1 diced green pepper
  • 1 bunch green onions sliced thin

Preparation

Step 1

Boil the first five ingredients
Let cool

Drain canned vegetables
Chop, dice & slice vegetables

Put vegetables in a clear container
Pour first ingredients over all and let chill for several hours or over night.
