Roasted Chicken Grape and Blue Salad

Ingredients
- 1 rotisserie chicken, shredded into lg chunks
- 18 oz bag romaine, reserve some for Meal 6
- 2 stalks celery, chopped
- 1/4 red onion, finely chopped
- 1 c green grapes
- 2-4 oz blue cheese
- 1 T lemon juice, fresh squeezed
- (1 T white wine vinegar)
- (1/4 c extra virgin olive oil)
- (1/4 t each salt and pepper)

Preparation
Step 1
Toss lettuce, celery, onion, grapes and bleu
cheese in large bowl. In small bowl, whisk
lemon juice, white wine vinegar, olive oil, salt
and pepper. Toss with salad until evenly
coated. Top with chicken; serve.
