Ingredients
- 2 pounds red potatoes with skin on, washed (6 to 7 potatoes)
- 1 cup mayonnaise
- 1/8 cup honey
- 1 tablespoon prepared mustard
- 1/4 teaspoon salt
- 1/4 cup sliced scallions (1 to 2 scallions)
- 3 slices cooked bacon, crumbled
Preparation
Step 1
In large saucepan, cook potatoes in boiling water 15 to 20 minutes, until fork tender. Drain and cool, then cut into 1" cubes, leaving skin on. Place in large bowl.
In small bowl, combine mayonnaise, honey, mustard, and salt; mix well. Toss dressing with potatoes until well coated. Gently toss with scallion rings and chill until ready to serve.
