Ingredients

  • 3

    eggs

  • 2

    cups sugar

  • 1

    cup oil

  • 2

    (2oz.) squares unsweetened baking chocolate

  • 2

    cups zucchini, washed, ends removed and grated

  • 1

    cup walnuts

  • 1

    teaspoon vanilla

  • 3

    cups of flour

  • 1

    teaspoon cinnamon

  • ¼

    baking powder

  • 1

    teaspoon baking soda

Directions

Preheat oven to 350. Using baking spray or shortening plus flour grease two 9 x 5 loaf pans. In a large mixing bowl, beat eggs until fluffy. Then add sugar and oil. Meanwhile, over hot water, melt chocolate. When chocolate is melted, add zucchini and vanilla to cool chocolate. Add cooled chocolate mixture to egg mixture. Sift together the flour, salt, cinnamon, baking powder and baking soda into the large bowl. The add walnuts. Divide the batter into 2 loaf pans and bake for 1 hour and 20 minutes or until wooden pick inserted comes out clean. Remove from oven and cool in pans for 10 minutes.
