Petit Pois a l'Anglaise - Julia

Ingredients

  • 3 cups shelled, very tender, sweet , young, fresh green peas
  • Salt for vegetable water.
  • 1 TB sugar
  • 6 TB butter

Preparation

Step 1

Boil the shelled peas in salted water 4-8 min.
Drain in colander.
Place in saucepan with sugar and a little salt and pepper.
Roll them gently over moderate heat for a moment or two to evaporate their humidity.
Turn peas into hot vegetable dish. Top with butter pieces.
