Cajun Shrimp

Awesome appetizer for any get-together...takes plain cocktail shrimp to a whole new level!

Ingredients
- 4 qts water
- 1 large lemon, sliced
- 4-5 lbs unpeeled large fresh shrimp (I usually use thawed, previously frozen shrimp)
- 2 cups vegetable oil
- 1/4 cup hot sauce
- 1 tablespoon olive oil
- 1 tablespoon minced garlic
- 1 1/2 teaspoons salt
- 1 1/2 teaspoons seafood seasoning e.g. Old Bay
- 1 1/2 teaspoons dried basil
- 1 1/2 teaspoons dried oregano
- 1 1/2 teaspoons dried thyme
- 1 1/2 teaspoons minced fresh parsley
- Leaf lettuce

Preparation
Step 1
Bring water and lemon to a boil; add shrimp and cook 3-5 min (just until cooked through). Drain well; rinse with cold water. Peel and devein shrimp; place in a large bowl.
Combine remaining ingredients, except leaf lettuce; mix well with a whisk.
Pour marinade over shrimp; toss.
Cover and chill 8 hours.
Remove shrimp from marinade and serve in a lettuce-lined bowl or platter.
