Ham and Lentil Soup

Ingredients

  • 1 ham bone with some meat attached
  • 8 oz. leftover ham, diced
  • 2 large onions
  • 16 oz. dried lentils
  • 1 1/2 cups shredded carrots
  • 4 cups chicken broth
  • 2 - 10 oz. cans petite diced tomatoes with green chiles
  • 1/2 cup white wine
  • 1 1/2 cups water
  • 3 tea. dried basil, divided
  • 1 tea. dried thyme, divided
  • 1 tea. pepper
  • 4 whole bay leaves
  • salt to taste

Preparation

Step 1

Dice onions, putting 3/4's in the crock pot and 1/4 in the refrigerator. Rinse the lentils several times to clean them. Remove any debris, drain well and place in the crock pot. Place the ham bone on top of the lentils, make sure the lid fits.

Add the carrots, chicken broth, 1 of the cans of tomatoes, wine, water, 2 tea. basil,,1/2 tea. thyme, the pepper and 3 of the bay leaves. Cover and cook on low for 5 hours.

Stir and turn the slow cooker up to high and cook for 1 hour. Remove the ham bone.. Remove any meat from the bone, shred and add to the pot. Discard bone. Add the diced ham, reserved diced onion, the remaining can of tomatoes and the remaining spices. Cover and cook on high for 1 hour, stirring every 20 minutes or so. Taste and add salt and pepper if necessary.

Remove the bay leaves and serve.

Can also be made in a large covered soup pot on low heat, but the first cooking period would be 2 hours instead of 5.
