Ingredients
- 2 tablespoons butter
- 1 shallot, chopped
- 1 tablespoon flour
- 2 (14.5-oz.) cans low sodium beef broth
- 1 1/2 pounds deli sliced roast beef
- Montreal steak seasoning, to taste
- Salt and freshly ground black pepper, to taste
- 4 torpedo sandwich rolls, split
Preparation
Step 1
Melt the butter in a large skillet over medium heat; add chopped shallot and sauté for 2 minutes; add flour and cook for 1 minute. Gradually whisk in broth; bring to a boil then reduce heat and simmer, uncovered, until ready to serve sandwiches. Pile sliced beef evenly across a cutting board; sprinkle with Montreal seasoning, salt and pepper. Set out 4 ramekins or small bowls for dipping sauce and the 4 split torpedo rolls. Using kitchen tongs, dip 1/4 of the meat into the au jus sauce and pile it into the rolls .To serve, place a filled roll on each dinner plate accompanied with a ramekin/bowl filled with au jus mixture.
