Ingredients

  • 2 qt water
  • 2 t. salt
  • 1 T oil
  • 8 oz linguine
  • 2 c. fresh sliced mushrooms
  • 1/4 c butter
  • 3 T flour
  • 2 c chicken broth
  • 3/4 c half & half
  • 1 T chopped parsley
  • 1 t. salt
  • 1/8 t. nutmeg
  • Dash pepper
  • 3 c. cubed cooked chicken or turkey
  • 1 c grated parmesan cheese
  • Chopped fresh parsley, if desired

Preparation

Step 1

Heat oven to 350 degrees. Boil water with salt and oil. Stir in flour. . Cook uncovered after water returns to a full rolling boil for 9-10 minutes. Stir occasionally. Drain and rinse under hot water.

In dutch oven, cook mushrooms in butter until tender. Stir in flour. Add chicken broth cook, stirring constantly until sauce is thickened. Remove from heat;stir in cream, parsley, 1 tsp salt, nutmeg and pepper. Fold in turkey and cooked linguine. Turn mixture into 9 x 13 pan. Sprinkle with cheese over top. Bake at 350 for 30 minute or until heated through. Let stand 5-10 minutes before serving. Garnish with parsley if desired.
