Ingredients
- 2 tbsp fresh parsley, chopped
- 1 tbsp lemon zest
- 1 1/2 tsp ground basil, dried
- 2 medium yellow summer squash, sliced
- 1 medium red bell pepper, cut into rings
- 1 tbsp black pepper
- 1/4 tsp table salt
- 2 chicken breast fillets, (8 oz) boneless, skinless, halved

Step 1
Preheat oven to 450 degrees, or grill to medium high heat.
Center one chicken breast half on each sheet of aluminum foil.
Combine parsley, lemon zest, basil and salt and sprinkle over the chicken. Top with squash and peppers, then sprinkle with pepper.
Bring up foil sides and double fold top and ends to seal the packet, leaving some room for heat circulation inside.
Bake 16-18 minutes in oven or 11-13 minutes on grill.
