Ingredients

    egg (or 2 egg whites)

    cups 1% low fat cottage cheese

  • 3

    cups cooked brown rice

  • 4

    cups fresh spinach, torn, uncooked, well drained

  • 2

    cups mushrooms, quartered

  • 1

    medium onion chopped

  • 2

    Tbsp mozzarella cheese, grated

Directions

1. Preheat oven to 375 F. 2. Beat egg and cottage cheese together. 3. Stir in rice, spinach, mushrooms, and onion until well blended. 4. Pour mixture into 13 X 9 inch baking dish coated wisth spray. Sprinkle with cheese. 5. Bake for 30 mins.
