Pot Roast

Ingredients

  • Roast
  • mild onions
  • carrots (sliced or baby)
  • potatoes
  • garlic cloves
  • olive oil
  • beef bullion/seasoning mix
  • salt/pepper/garlic powder
  • (no certain amount of these, just whatever you have)

Preparation

Step 1

I used my Pampered Chef covered baker stoneware. Use any covered roaster or baker.

Mix beef seasoning with 1 TBSP olive oil and rub roast all over. Make 5 or 6 small slits in top of roast and insert a garlic clove in each. Top with onion rings. Surround with carrots, onions, and sliced potatoes. Salt/season the vegetables.

Bake, covered, in 300 degree oven for about 1 hour per 1/2 pound of roast (4 hours for 2 pound roast). That sounds like a lot, but that is what I just did to make a wonderful roast. Tender, juicy, cut it with a fork.
