Salmon Dip

This fabulously rich-tasting and elegant looking appetizer will be the hit of any party-year round. It's high in protein, loaded with nutrients, and lean on fat. The wonderful blend of horseradish, lemon, and parsley create a flavor explosion. You can make this a day or two ahead. We're recommending you serve it with crackers or " tomato chips", or dry-packed dehydrated tomato slices.

Ingredients
- 8 ounces nonfat cream cheese, softened
- 1 tablespoon lemon juice
- 1 tablespoon horseradish
- 6 1/2 ounce can salmon, drained
- 1/2 cup chopped fresh Italian (flat leaf) parsley
- Sprigs of parsley for garnish
- 40 whole wheat crackers
- Dried tomato slices

Preparation
Step 1
Blend (by hand or in food processor) the cream cheese, lemon juice and horseradish.
Add drained salmon and blend with a fork.
Mound salmon on serving platter and sprinkle with chopped pasley.
Garnish with sprigs of parsley.
Chill for 1 hour.
Arrange crackers around salmon.
