Ingredients
- 1 package 12-16oz smoked sausage, sliced
- 1 can 16 oz kidney beans, drained and rinsed
- 1 can 10oz diced tomatoes and green chilies, undrained
- 2 tbsp chili powder
- 2 cups minute rice uncooked
- 8 oz shredded cheddar cheese
Preparation
Step 1
Cook sausage in large nonstick skillet on medium-high heat for 5 minutes or until lightly browned stirring occasionally.
Add beans, tomatoes, and chili powder, mix well. Stir in 2 cups water. Bring to a boil.
Stir in rice and shredded cheddar cheese cover. Reduce heat to low; simmer 5 to 7 minutes or until water is almost absorbed. Stir until cheese is completely melted.
