Scandinavian Open-Face Shrimp Sandwich

Ingredients
- 1/2 cup mayonnaise
- 1/2 cup chopped dill
- 4 teaspoons Dijon mustard
- 2 teaspoons lemon juice
- salt & pepper to taste
- 4 slices pumpernickel rye or egg bread, toasted
- 1 pound pre-cooked shrimp,
- rinsed, patted dry, & chopped
- 4 Bibb lettuce leaves
- 8 thin slices of cucumber
- garnishes of choice such as
- lemon slice, tomato wedge, sprig of dill
Preparation
Step 1
Mix the first 5 ingredients. Spread 1 Tablespoon of the mixture over each slice of bread. Mix the shrimp with the remainder of the dressing mixture. Place 1 lettuce leaf on each slice of bread, add 2 slices of cucumber, and top with shrimp mixture.
