Ingredients

  • 4 medium size baking potatoes, scrubbed and dried
  • 2 tsp vegetable oil, olive or canola oil
  • 1/4 cup chopped onion
  • 1/2 cup chopped green pepper
  • 1/2 lb ground turkey
  • 1/8 tsp dried basil
  • 1 Tbsp white wine
  • 1/2 cup tomato puree
  • 4 oz grated cheddar cheese

Preparation

Step 1

1. Preheat oven to 375 F.
2. Pierce potatoes with fork. Wrap in foil and bake 1 hr.
3. While potatoes are baking, heat oil in large potato. Add onion, and green pepper and cook until tender, about 10 mins, stiring often.
4. Add ground turkey and cook until no pink.
5. Add basil, wine. and tomato puree. Bring to boil, lower heat and simmer covered for 30 mins.
6. Remove potatoes from oven, unwrap, and slice lengthwise. Top each potato 1/2 with about 1/4 cup of creole mixture and 1/2 oz of cheese. Serve.
