Waffle Breakfast Casserole

Ingredients

  • 1 lb. bulk sausage
  • 6 frozen waffles, toasted and cubed
  • 1 cup shredded cheddar cheese (4 oz)
  • 6 eggs, slightly beaten
  • 2 cups milk
  • 1 tea. dry mustard
  • 1/8 tea. pepper
  • maple syrup

Preparation

Step 1

In a a large skillet, cook sausage until brown. Drain off fat. Arrange half of the waffle cubes in an ungreased 2 qt. rectangle baking dish. Top with half of the sausage and 1/3 cup of the cheddar cheese. Repeat layers.

In a medium bowl, combine eggs, milk, mustard, and pepper. Pour egg mixture over layers in dish. Cover and chill in refrigerator for 4 to 24 hours.

Preheat oven to 350 degrees. Bake, uncovered, for 50-60 minutes or until a knife inserted near center comes out clean. Sprinkle with remaining cheese. Let stand 10 minutes before serving.

Cut into wedges to serve. Serve with maple syrup.
