Ingredients
- 1 lb lean beef chuck, trimmed and cut into 3/4 inch cubes
- 1 (15 1/2 oz) can pinto beans, rinsed and drained
- 1 (14 1/2oz) can petite diced tomatoes
- 1 1/4 cups reduced sodium beef broth
- 1 onion, finely chopped
- 2 tablespoons cornmeal
- 1 jalapeno pepper, seeded and minced
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1/4 teaspoon anise seeds, crushed
- 1/4 teaspoon cayenne pepepr
- 1 cup lightly packed frehsh cilantro leaves
Preparation
Step 1
1. Combine all ingredients except cilantro in slow cooker. Cover and cook until beef is fork tender, 4-6 hours on high or 8-10 hours on low. Stir in 3/4 cup of cilantro. Serve sprinkled with remaining cilantro.
