Italian Style Chicken and Rice

Ingredients

  • 2 cups minute rice uncooked
  • 1 tbsp oil
  • 4 small boneless, skinless chicken breast halves (1 lb)
  • 1 can 14.5 oz cut green beans drained
  • 1 can 14.5 oz diced tomatoes with basil, garlic and oregano, undrained
  • 1/4 tsp salt
  • 1/8 tsp pepper

Preparation

Step 1

Prepare rice according to package instructions
Heat oil in large skillet on medium-high heat. Add chicken. Cook until browned on both sides.
Add tomatoes with liquid, and green beans drained. Bring to boil; cover. Reduce heat to medium-low
Simmer 5 minutes or until chicken is cooked through. Stir in salt and pepper
Serve over cooked rice.
