Fresh Tomato Sauce - Chef Kim

add some anchovies and brown a rib - pork or beef

Ingredients

  • 1 can crushed and 1 can tomato sauce
  • 3/4 tsp. salt
  • 2 tbsp. olive oil
  • 1 tbsp. tomato paste
  • 1 garlic clove, halved
  • 1 bay leaf sprig
  • 1 bunch of fresh basil

Preparation

Step 1

Brown the rib in the olive oil - add anchovy paste. Then layer the remaining ingredients - meaning, add one element at a time then allow to simmer. Add one can crushed tomatoes...then add garlic....simmer then add remaining - salt, tomato paste, basil, bay leaf - bring to a boil then lower heat until sauce thickens.
This produces about 3 cups of sauce.
