Quick Chili Beans

Ingredients

  • 1 medium onion, chopped (about 1 cup)
  • 2 garlic cloves, minced
  • 2 tsp olive oil
  • 1 tsp cumin
  • 1 T chili powder
  • 2 cans pinto, kidney, or black beans, drained and rinsed
  • 3/4 cup chicken broth
  • 1 T tomato paste
  • 1 T red wine vinegar
  • salt and pepper to taste

Preparation

Step 1

In saucepan, cook the onion and garlic in oil for 5 minutes over low heat. Add cumin and chili powder and cook for 3 minutes. Add remaining ingredients and simmer for 10 minutes. Salt and pepper to taste.
