Ingredients

  • 12 corn tortillas (6-7 inch)
  • 2 cups shredded jack cheese
  • 3/4 cup chopped green onion
  • Sauce
  • 1/4 cup melted butter
  • 1/4 cup flour
  • 1 tsp seasoned salt
  • 2 cups water
  • 2 tsp chicken seasoning
  • 1 cup sour cream
  • 1 sma can diced green chiles

Preparation

Step 1

1) Soften tortillas in microwave a few at a time. Cover with paper towels and run at high about 30 seconds. Will be soft to wrap.
2) Place 2 TBSPs cheese and 1 tsp onion on each tortilla.
3) Roll up and place in greased baking dish.

Sauce
1) Mix butter, flour, and seasoned salt in a sauce pan.
2) Add water and chicken seasoning.
3) Cook until thick and bubbly.
4) Add sour cream and chiles - heat the mixture. Do not boil.

Pour sauce over enchiladas and back 20 minutes at 325 degrees. Sprinkle with cheese and bake 5 minutes more.
