Ingredients
- Pancake:
- • ¼ cup butter
- • 1 cup all purpose flour
- • 2 cups milk
- • 3 eggs
- • ½ tsp salt
- Filling:
- 2 tbsp. butter
- 2 tsp cornstarch
- 1 tbsp. cold water
- 1/3 cup brown sugar
- ½ tsp cinnamon
- 2 medium cooking apples, cored and sliced

Heat oven to 400; in 12x8 baking pan, melt ¼ cup butter in oven. In small mixing bowl combine all remaining pancake ingredients. Beat at low speed until well mixed. Pour melted butter into batter; continue beating until well mixed. Pour batter into hot pan. Bake 30 to 40 minutes or until puffed, set in the center and golden brown.
Meanwhile, in 10”skillet, melt two tbsp butter. In small bowl stir together cornstarch and water. Stir brown sugar, cinnamon and cornstarch mixture into butter. Cook over med heat, stirring constantly, until sugar dissolves and mixture bubbles and thickens. Stir in apples; continue cooking until apples are evenly coated and crispy tender (10 to 12 minutes). Spoon filling over hot pancake; serve immediately.
