Peanut Butter Cookies
- 1/2 cup peanut butter, any type
- 1/2 cup butter, softened
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 1 egg, beaten
- 1 cup all-purpose flour
- 3/4 teaspoon baking soda
- pinch salt
Preheat oven to 375 F.
Cream together the peanut butter, butter and sugars.
Add beaten egg and mix to combine.
In a separate bowl, mix together flour, baking soda and salt.
Add to sugar and egg mixture and stir until all dry ingredients are well incorporated.
Roll into 1-inch balls and place on greased baking sheets.
Flatten each ball with a fork, making a criss-cross pattern.
Bake for about 10 minutes, or until cookies begin to brown.
