Reduction "Butter" Sauce
- 3 1/2 cups unsalted or very lightly salted vegetarian broth
- 1/4 cup good-tasting, dairy-free margarine or extra-virgin olive oil
- 1/4 teaspoon agar powder, or 1 1/2 teaspoons agar flakes, dissolved in 2 tablespoons cold broth or water
- Salt and freshly ground pepper, to taste
In a small saute pan or wide saucepan, reduce the broth over high heat until it measures 1 1/4 cups. Pour it back into the pan, and whisk in the margarine, along with the dissolved agar. Simmer for 3 to 4 minutes; season to taste with salt and pepper.
