Cucumber Salad

Ingredients

  • 2 medium tomatoes cut into slices
  • 1 green pepper, seeded and cut into rings
  • 1 yellow pepper, seeded and cut into rings
  • 1 medium cucumber cut into slices
  • 1 medium red onion, sliced and separated into rings
  • 1 cup sliced black olives
  • 2 cups cider vinegar
  • 2 cups water
  • 1-cup sugar
  • 1/2 teaspoon ground black pepper

Preparation

Step 1

Layer twice, tomato, green pepper, yellow pepper, cucumber, onion and black olives in a 2-quart or larger bowl that will accommodate.
Mix vinegar, water, sugar and pepper together in another bowl.
Pour over vegetables, so they are covered with the liquid, cover and refrigerate for several hours or overnight.
Drain some of the liquid to serve.
