Ingredients
- 2 cloves Garlic - minced
- 3 Tbs Fresh Parsley - chopped
- 2 tsp Lemon Zest - grated
- 1/2 tsp Salt
- 2 Tbs Butter
- 2- 1/2 lbs Summer Squash
Preparation
Step 1
Stir Garlic, Parsley, Lemon Zest, & Salt together in Sm. bowl. Heat Butter in a 12” skillet over High heat. When foam subsides, add Squash & cook, stirring frequently, until edges are lightly colored but Squash is still crisp, ˜ 3 min. Stir parsley mixture into Squash & sauté, stirring constantly, just until tender when pierced w/ a fork, ˜ 2 min. longer.
