PEACH FREEZER JAM

A fresh peach taste for the middle of winter.

Ingredients

  • 1 cup peeled, pitted and mashed peaches, about 1 lb
  • 2-3/4 cups granulated sugar
  • 1/2 cup light corn syrup
  • 1 tbsp lemon juice, fresh or bottled
  • 3 oz. liquid fruit pectin, fresh or bottled

Preparation

Step 1

Combine peaches, sugar, syrup and lemon juice in bowl. Stir well. Let stand 10 minutes.

Add pectin. Stir until sugar is dissolved. Pour into small containers, leaving 1 inch headroom. Cover. Freeze. Store container in use in refrigerator up to 1 month.

Peach-Strawberry jam: use half mash peaches and half mashed strawberries.
