Ingredients

  • 2 tbsp. olive oil
  • 1/2 c chopped red onion
  • 1 orange bell pepper diced
  • 2 tbsp. unsalted butter
  • 5 ears corn - kernels cut from cob (4 cups)
  • 1 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 2 tbsp. julienned fresh basil, chives, or parsley

Step 1

Saute onions in oil over medium heat for 5 mins, or til soft. Stir in the bell pepper and sauté for 2 more mins. Add the butter to the pan and allow to melt. Add the corn, salt, pepper, and cook, stirring occasionally for 5-7 mins until the corn just loses its starchiness.
Season to taste. Gently stir in basil or other herbs and serve hot.
