Ingredients
- 6 ounces roasted garlic chicken sausage, removed from casings, crumbled
- 8 ounces ground chicken
- 3/4 cup Italian breadcrumbs
- 1 cup fresh grated Parmesan cheese
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1-1/2 tsp dried Italian seasoning
- 1/2 tsp crushed red pepper
- 1/4 cup dried parsley, crumbled or 2 tbsp fresh parsley, chopped
- 1/2 tsp kosher salt
- 1/2 tsp fresh cracked black pepper
- 1 large egg, lightly beaten
- 1 cup marinara sauce
- 1 cup fresh mozzarella, sliced into small thin slices
Preparation
Step 1
1.Preheat oven to 350°F. Line a baking sheet with parchment paper.
In a large mixing bowl, combine the first 12 ingredients. Combine well but don’t over mix. Roll chicken mixture into 1″ meatballs and place onto baking sheet. Bake for 16-18 minutes until lightly browned.
2.Spoon about one tablespoon marinara sauce over each meatball. Place a small thin slice of mozzarella on top of each meatball.
Return to oven and cook for about 5 minutes or until cheese is melted.
3. Serve with pasta or zucchini pasta
