Salad of Oranges, onions & Roasted Peppers

Ingredients

  • 2 roasted red bell peppers
  • 3 medium oranges
  • 1 small yellow onion
  • 3 T olive oil
  • 1 T lemon juice
  • 1 T lime juice
  • 1/8 t. salt
  • 2-3 drops Tabasco
  • Arugula
  • Nicoise olives
  • Freshly ground pepper

Preparation

Step 1

Quarter red peppers lengthwise. Put in bowl & sprinkle with 1 T olive oil. Set aside
Peel oranges, removing all white membrane. Remove any seeds and center membranes. Add to peppers.
Peel & thinly slice onion; add to peppers & oranges.
Whisk together 3 T olive oil, lemon, lime & orange juices, salt & Tabasco. Add to pepper mixture & gently turn so all ingredients are coated with dressing.
Refrigerate & marinate 1-2 hrs. Serve on arugula & garnish with nicoise olives. 4 Servings
