Sweet and Sour Chicken - Allergy Free

A delicious sweet and sour chicken stir fry made with NO DAIRY, NO SOY, NO EGG, NO NUTS, NO WHEAT, and NO GLUTEN.

Ingredients

  • 2 Tablespoons Canola Oil
  • 1 lb sliced Chicken Breast
  • 1 small chopped Onion
  • 1 small chopped Green Pepper
  • 1 small chopped Red Pepper
  • 1 chopped Celery Stalk
  • 1/2 can Pineapple
  • 1 1/4 cup of Orange Juice
  • 1 1/2 Tablespoon of Cornstarch
  • 1/4 cup Brown Sugar
  • 1 Tablespoon Vinegar

Preparation

Step 1

1. In a 2 cup tupperware container add orange juice, cornstarch, brown sugar, and vinegar. Screw on lid tightly and shake to mix weel.

2. Heat oil in large pan over med heat.

3. Cook chicken for approx. 4-6 minutes

4. Add veggies and pineapple to pan with the chicken and continue cooking approx. 6-8 minutes.

5. Add orange juice mixture to pan and bring to boil. Simmer stirring constantly until juice thickens, approx. 3 minutes.

6. Serve over a bed of rice.
