French Onion Pork- Slow Cooker

This is my favorite version of the Betty Crocker recipe "French Onion Beef." It's one of my favorite comfort foods, so I usually double the recipe in my 6 quart slow cooker. If you prefer beef, cubed boneless beef round steak can be substituted for the pork (we just find the pork to be much more tender and moist).

Ingredients

  • 1 1/2 pounds of fresh pork stew meat (this can be found at Walmart and several grocery stores with good meat departments)
  • 1 pound fresh mushrooms
  • 1 10 3/4 oz. can condensed French Onion soup
  • 1 large white onion
  • garlic powder to taste
  • 1 6 oz. package of dry instant chicken stuffing mix (herb stuffing mix may be used if preferred)
  • 1/4 cup (1/2 stick) butter
  • 8 oz. shredded mozzarella cheese

Step 1

1. Slice onion into rings. Cut each onion slice into fourths. You can simply slice the onion into rings, but it will be much more sloppy to eat.

2. Clean the mushrooms. Place cap side down on a cutting board, and quarter from top to bottom, into wedges.

3. Place half of the pork stew meat into the slow cooker. Sprinkle lightly with garlic powder.

4. Layer half of the onions, half of the mushrooms, and pour half of the soup over the layers.

5. Repeat steps #3 and #4 with the remaining half of the ingredients.

6. Cover and cook on the low setting for 8-10 hours, or until pork is fully cooked and no longer pink.

7. 25 minutes before serving, remove 1/2 cup of the cooking liquid in the slow cooker, and combine it with the butter (I use a turkey baster to do this, but any heat resistant cup will work). If the butter does not completely melt, it can be placed in the microwave for 30 seconds or until the butter is completely melted.

8. Stir the butter and cooking liquid together, and add the contents of the stuffing mix. Stir just until the stuffing mix is evenly moistened. Evenly distribute the stuffing mixture on top of the remaining slow cooker contents, evenly sprinkle the shredded mozzarella on top of the stuffing mixture, and increase the heat setting to "High." Cover and cook for an additional 20 minutes, or until the cheese is completely melted.

9. Serve with your favorite vegetable(s).
