Cranberry Muffins

Ingredients

  • 2 cups frsh cranberries, chopped
  • 1/3 cup sugar
  • 6 tbsp orange juice
  • 1 tbsp orange rind
  • 2 cups flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup margarine
  • 1 cup sugar
  • 1 egg
  • 1/2 cup pecans (optional)

Preparation

Step 1

Combine cranberries, 1/3 cup sugar, orange juice and rind. Cream margarine, 1 cup of sugar and egg. Add sifted dry ingredients to creamed mixture alternately with cranberry mixture. Fill greased muffin tins 3/4 full. Bake at 375 degrees for 20 minutes.
