Easy Veggie Soup

Ingredients

  • 1 t olive oil
  • 1 small chopped onion
  • 1 t minced garlic
  • 1 t dried oregano
  • 1 t dried basil
  • 2 c frozen mixed veggies
  • 4 c low-sodium vegetable broth

Preparation

Step 1

Saute onion, thru basil in olive oil. When onion is soft add frozen veggies and broth, bring to a boil and simmer for 15 mins. Puree half of the soup for a thicker, richer taste and texture. Add salt and pepper to taste.
