CAESAR SALAD WITH ONION BAGEL CROUTONS

An eggless version of classic Caesar Salad enhanced with the addition of onion bagel croutons

Ingredients

  • Salad:
  • 1/2 cup olive oil
  • 2 Tbsp. red wine vinegar
  • 2 Tbsp. fresh lemon juice
  • 1 Tbsp. Worcestershire sauce
  • 1 tsp. Dijon mustard
  • 1 tsp. grated lemon peel
  • 1 large clove garlic, minced
  • 2 drops hot pepper sauce
  • 2 heads romaine lettuce, torn into bite-sized pieces

  • 2/3 cup (about 3 oz.) Parmesan cheese
  • Onion Bagel Croutons:
  • 3 Tbsp. butter
  • 1 1/2 Tbsp. olive oil
  • 2 small garlic cloves, minced
  • 3 onion bagels, each cut into 2 semi-circles

Preparation

Step 1

Onion Bagel Croutons: Preheat oven to 325 degrees F. Combine first 3 ingredients in heavy small sauce pan over medium heat. Stir until butter melts. Remove from heat. Slice bagel into 1/4" thick rounds. Place on cookie sheet. Brush with butter mixture. Bake until crisp and brown, about 30 minutes. Cool. (Croutons can be prepared a week ahead & stored in an airtight container at room temperature.)

Salad: Whisk first 8 ingredients in a small bowl. Combine lettuce, as many croutons as desired, cheese and generous amount of pepper in a large bowl. Add dressing, toss well and serve.

Note: I've seen onion bagel croutons at some grocery stores but I included the recipe for them in case you can't find them in your area.
