Roast Goose

Ingredients

  • Stuffing:
  • 5 lb. goose
  • Salt and pepper
  • Chicken broth
  • 2 onions, sliced
  • 1 orange, peeled, and broken up
  • 1/4 cup prunes

Preparation

Step 1

Rub goose with salt and sprinkle with ground pepper. Score goose in a diamond pattern. Add chicken broth to pan to prevent burning.

Stuff goose with stuffing. Tie goose legs up with string. Cover goose loosely with foil for the first hour.
Roast until temperature reads 170ºF.
