Ingredients
- Pancakes:
- • 1 cup flour
- • 2 tsp. sugar
- • ½ tsp. baking powder
- • ¼ tsp. baking soda
- • ¾ cup buttermilk
- • ¼ cup milk (add more if needed)
- • 1 egg, separated
- • 2 tbsp. butter
- Maple Butter:
- • Maple syrup, Grade 3
- • Cubed sugar
- • Banana for topping
Preparation
Step 1
Mix dry ingredients. Separate egg yolk and white. In a separate bowl, mix milks and egg white till stiff. In another bowl, mix yolk with butter. Fold in the egg white.
Mix the wet ingredients with the dry ingredients.
Butter the griddle (to make pancakes crispy on the outside). Use ¼ cup batter per pancake. Cook 2-3 minutes the first side. Flip and then cook for 1-2 minutes the second side.
Slice one banana. Caramelize bananas in sugar and maple syrup over low flame.
