Ingredients
- 12 large cucumbers
- 10 medium onios
- 5 cups sugar
- 3 tsp. celery seed
- 8 green peppers
- 4 tsp. salt
- 5 cups vinegar
- 6 tsp. mustard seed
Preparation
Step 1
Slice cucumbers longways. Remove seeds. Grind cucumbers, green peppers and onion on coarse in a food chopper. Add salt. Let stand in crock or enamel vessel overnight. Drain. Combine sugar, vinegar, celery seed and mustard seed. Heat to warm. Pour over vegetables. Heat to boiling and simmer 2 minutes. Seal in hot, steralized jars ~ ait improves taste if you tie a Tablespoon of pickling spice in thin cloth and put in kettle while heating, and add a little bit of cinnamon to the cloth.
