Green Beans with Lemon and Garlic

Ingredients

  • 2 pounds green beans, ends trimmed
  • 1 tablespoon extra-virgin olive oil
  • 3 tablespoons butter
  • 2 large garlic cloves, minced
  • 1/2 cup white wine
  • 1/3 cup water or chicken broth
  • 1 tablespoon lemon zest
  • Salt and freshly ground black pepper
  • 1 teaspoon red pepper flakes

Preparation

Step 1

Blanch green beans in a large stock pot of well salted boiling water or chicken broth until bright green in color and tender crisp, roughly 2 minutes. Drain reserving 1 cup of liquid. Place in skillet with butter, olive oil garlic and lightly brown.


Add 1/2 cup wine to deglaze pan. Add the lemon zest and juice of lemon and red pepper flakes and saute until fragrant, about 30 seconds. Add the reserved liquid cover and continue to steam until desired doneness.
