Asparagus Lemon Pasta Salad

Ingredients

  • 1/2 pound penne pasta
  • 1/4 cup and 1 tsp olive oil
  • 1 bunch asparagus, cut into 1 1/2" pieces
  • 3 tbs lemon juice
  • grated rind of 1 lemon
  • salt & pepper
  • 1 jarred red pepper, sliced
  • 2 tbs pine nuts

Preparation

Step 1

Cook pasta, toss with 1 tsp olive oil and chill. Simmer asparagus in 1/2 cup water until tender. Put into ice water. Toast pine nuts. Mix together lemon juice, zest, salt & pepper and 1/4 cup olive oil. Add asparagus, drained red pepper, pine nuts and pasta.
