Ingredients

  • Vinaigrette:
  • 2 tsp (10 ml) minced garlic
  • 1 tsp (5 ml) salt
  • 1/2 tsp (2 ml) freshly ground black pepper
  • 1 tsp (5 ml) Dijon mustard
  • 1 tbsp (15 ml) fresh lemon juice
  • 2 tbsp (30 ml) red wine vinegar
  • 2 tbsp (30 ml) crumbled strong blue cheese, like Roquefort
  • 1/3 cup (75 ml) olive oil
  • Winter greens:
  • 1 small head Romaine lettuce
  • 1 small head radicchio
  • 1 head endive
  • 1/4 cup (50 ml) chopped fresh parsley

Preparation

Step 1

1. Whisk garlic, salt, pepper, mustard, lemon juice and vinegar in a small bowl. Whisk in blue cheese. Drizzle in olive oil and whisk until emulsified. This can be made in advance and kept refrigerated, tightly covered. for a week.
2. Tear lettuce, slice radicchio and endive and combine with parsley in a large salad bowl. Drizzle with vinaigrette and toss well. Serves 4
