Cranberry-Orange Nut Bread

Ingredients

  • 2 C all-purpose flour
  • 1 C sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 1/2 C fresh cranberries, finely chopped
  • 1/2 C chopped pecans or walnuts
  • 1/2 C golden raisins
  • 1 tsp grated orange peel
  • 3/4 C orange juice
  • 1/2 C egg substitute
  • 1/4 C safflower oil

Preparation

Step 1

Preheat oven to 350*. Oil a 9x5 inch loaf pan. In a large bowl, combine flour, sugar, baking powder and salt. Stir in cranberries, pecans, raisins and orange peel.
In a medium bowl, combine orange juice, egg substitute and safflower oil. Add orange juice mixture to flour mixture; stir just until combined; pour into prepared pan.
Bake until toothpick inserted in center comes out clean, 55-60 minutes. Cool on wire rack for 15 minutes before removing from pan.
