pastry for double crust 9 inch pie
tsp ground cinnamon
dash of salt
cups peeled and sliced peaches (about 7 or 8 peaches) ( I buy 3 pounds)
tbsp of butter
Preheat oven to 400 degrees. Line pie plate with half of the pastry. Stir together the sugar, flour, cinnamon, and salt. Add the peaches and toss very gently to coat. Pour into the bottom crust and dot with the butter. Top with either plain or lattice crust made from the other half of the pastry. Sprinkle with a little more sugar and cinnamon. Bake for 40 to 45 minutes, or until the filling is bubbly and the peaches are tender.
