Ingredients
- 2 C. sweetened, shredded coconut
- 1/2 C. sugar
- 2 egg whites
- 1 recipe Lemon Tart Filling
Preparation
Step 1
1. Preheat oven to 325°F.
2. Process coconut and sugar in food processor until coconut is minced.
3. Blend in egg whites. Press mixture into well-greased 4" tartlet pans with removable bottoms. Bake for 25-30 minutes, or until golden.
4. Remove from pans.
5. Prepare tart filling.
6. Fill each crust with 1/4 C. filling, bake for 7 minutes, and cool.
