TART - LEMON AND COCONUT TARTLETS

Ingredients

  • 2 C. sweetened, shredded coconut
  • 1/2 C. sugar
  • 2 egg whites
  • 1 recipe Lemon Tart Filling

Preparation

Step 1

1. Preheat oven to 325°F.

2. Process coconut and sugar in food processor until coconut is minced.

3. Blend in egg whites. Press mixture into well-greased 4" tartlet pans with removable bottoms. Bake for 25-30 minutes, or until golden.

4. Remove from pans.

5. Prepare tart filling.

6. Fill each crust with 1/4 C. filling, bake for 7 minutes, and cool.
