Ingredients
- 2 slightly beaten eggs
- 3/4 C. maple syrup
- 1/2 C. granulated sugar
- 1/2 C. packed brown sugar
- 1/2 C. milk
- 1/2 C. butter, melted
- 1 tsp. vanilla
- 1 C. flaked coconut
- 3/4 C. rolled oats
- 1/2 C. chopped walnuts
- 1 9-inch unbaked pie crust
- Cinnamon Whipped Cream
- 1 C. whipping cream
- 2 T. sifted powdered sugar
- 1 tsp. vanilla
- 1/2 tsp. ground cinnamon
- Dash ground nutmeg
Preparation
Step 1
Pie:
1. Preheat oven to 375°F. 1. Chill mixing bowl and beaters in freezer for whipping cream.
2. In a large mixing bowl, combine the eggs, maple syrup, granulated sugar, brown sugar, milk, butter and vanilla. Stir together well.
3. Stir in the coconut, oats and nuts. Pour filling into unbaked pie crust.
3. Bake for 35 to 40 minutes or till a knife inserted near the center of pie comes out clean.
4. Cool on a wire rack. Refrigerate within 2 hours. Cover for longer storage.
Cinnamon Whipped Cream:
1. In chilled mixing bowl, combine whipping cream, sifted powdered sugar, vanilla, ground cinnamon and ground nutmeg.
2. Beat with chilled beaters of an electric mixer on medium speed till soft peaks form (tips curl).
