TUNA*****Tuna Melt

Ingredients

  • 1 can tuna (large) drained
  • 2 tablespoons Hellmann's Light
  • 1 tablespoon capers, rinsed and minced
  • 2 gherkins, minced
  • 1/4 sweet red pepper, minced
  • 1 teaspoon dried dill
  • Maldon salt and freshly ground pepper, to taste
  • 4 slices light Gruyere or Provolone Cheese

Preparation

Step 1

* Combine all ingredients except cheese and mix well.

* Toast the bread on one side then top untoasted side with tuna mixture and cheese slices then put under broiler until the cheese melts.

* Try adding some sliced tomato to mine under the cheese.

* A bread with some texture works well here, nothing soft, or a PC Blue Menu Multigrain thin.

* Serve Dan's with extra gherkins on the side.
