Ingredients
- FOR PASTRY:
- 1 1/2 C. flour
- 1 1/2 sticks butter
- 5 T. powdered sugar
- FOR LEMON CURD:
- 3 large eggs
- 1/3 C. fresh lemon juice
- 3/4 C. granulated sugar
- 4 T. unsalted butter, cut in pieces
- 2 T. lemon or lime zest
Preparation
Step 1
For pastry:
1. Preheat oven to 350°F.
2. Place ingredients in food processor and pulse until mixture is crumbly. Press lightly into six greased 3" tartlet pans. Bake approximately 8-10 minutes or until golden brown. Cool before removing from pans.
For Lemon Curd:
1. In double boiler, whisk together eggs, juice and sugar until blended. Cook over simmering water, whisking constantly until mixture becomes pale and quite thick, about 10 minutes. Remove from heat and pour through a fine strainer. Whisk in butter pieces until melted. Add zest. Allow to cool completely.
2. Divide curd equally among tartlet shells.
